Ground Beef Totchos

Ingredients

  • 2 (16-oz) bags frozen potatoes
  • ½ lb lean ground beef
  • 2 tbsp taco seasoning
  • 3 tbsp water
  • 1½ cups shredded Mexican cheese blend
  • 1 cup salsa
  • Shredded lettuce
  • *Sour cream, guacamole, jalapenos

Instructions

  1. Heat oven to 425°F. Line the cookie sheet with sides on foil or cooking parchment paper.
  2. Place frozen potatoes on a cookie sheet. Bake as directed on the bag.
  3. Meanwhile, in a 10″ skillet, cook beef over medium heat for 8–10 minutes, stirring occasionally, until thoroughly cooked; drain. Add taco seasoning mix and water. Cook for about 2 minutes or until hot. Sprinkle potatoes with beef mixture and cheese.
  4. Bake 3–5 minutes longer or just until cheese is melted.
  5. Top with remaining ingredients and serve.
