Peanut Butter Granola Balls

Ingredients

  • ½ cup peanut butter or almond butter
  • ½ cup brown rice syrup or ⅓ cup honey
  • 1 cup crispy rice cereal
  • 1½ cups granola
  • ¼ cup dried fruit, chopped

Instructions

  1. Place nut butter and syrup in a saucepan; heat on medium-low heat for 2 minutes, or until it’s warm and smooth.
  2. In a bowl, mix cereal, granola, and fruit. Stir warm nut-butter mixture into granola mixture. Roll mixture into 1″ balls.

Notes

  • Store leftover balls, covered, at room temperature for up to 1 week.
