Taco Stuffed Pasta

Ingredients

  • 1 lb ground beef
  • 1 green pepper, diced
  • 1 onion, diced
  • 1 pkt taco seasoning, divided
  • Jumbo pasta shells
  • Colby jack cheese sticks, cut in threes
  • Sour cream
  • *Green onions

Instructions

  1. Brown ground beef. Drain. Add peppers, onions, and taco seasoning (reserving a few tsp of seasoning for the dip).
  2. Meanwhile, cook jumbo shells al dente.
  3. Stuff one jumbo shell with meat mixture. Add a cut of cheese. Cover with another jumbo shell. Spray stuffed shells with cooking spray.
  4. Cook stuffed shells in an air fryer on 400°F for 15–20 minutes.
  5. Mix remaining taco seasoning into sour cream to serve as dip for the shells. Garnish with green onions.
