Breakfast Casserole

Ingredients

  • 1 pkg refrigerated biscuits
  • 8 frozen hash brown patties
  • 1 lb ground sausage
  • 3 tbsp green chiles
  • 8 slices bacon
  • 8 eggs
  • Milk
  • 1/2 cup cottage cheese
  • Salt & pepper to taste
  • 1 (8-oz) pkg Mexican blend shredded cheese
  • *Hot sauce

Instructions

  1. Preheat oven to 375F.
  2. Cook ground sausage until browned and drain. Cook bacon to very crispy.
  3. Press biscuits into a layer in a casserole pan. Top with hash browns, then sausage, then green chiles, then crumbled bacon.
  4. In a small bowl, beat eggs with a splash of milk and cottage cheese; season with salt and pepper. Pour egg mixture over food in casserole pan. Top with cheese.
  5. Cook for 30–40 minutes.
  6. *Top with hot sauce and serve.

Notes

  • Make sure eggs cook! Optional to cook eggs first?
  • Add a layer of gravy?
