Basic Dinner Rolls

Ingredients

  • 5¾–6&dash24; cups all-purpose flour
  • ¼ cup sugar
  • 2 tsp salt
  • 2 pkgs active dry yeast
  • 1 cup water
  • 1 cup milk
  • ½ cup butter
  • 1 egg

Instructions

  1. In a large bowl, combine 2 cups flour, sugar, salt, and yeast; mix well.
  2. In a small saucepan, heat water, milk, and ½ cup butter until very warm (120–130°F). Add warm liquid and egg to the flour mixture; blend at low speed until moistened. Beat 3 minutes at medium speed. By hand, stir in an additional 2½–3 cups flour until the dough pulls cleanly away from the sides of the bowl.
  3. On a floured surface, knead in 1¼–1¾ cups flour until dough is smooth and elastic, 8–10 minutes. Place dough in a greased bowl; cover loosely with greased plastic wrap and a cloth towel. Let rise in a warm place (80&ndash85°F) until light and doubled in size, 45&ndash60 minutes.
  4. Punch down the dough several times to remove all air bubbles. Divide dough in half. Shape each half as directed in “How to Shape Dinner Rolls.”
  5. Heat oven to 400°F. Uncover dough. Bake for 16–20 minutes or until golden brown.
  6. Immediately remove rolls from pans; cool on wire racks for 15 minutes. Brush with melted butter.
  7. Serve warm or cool.
