2½ lb boneless beef rump roast, trimmed and cut into 2” pieces
¼ cup soy sauce
¼ cup fresh orange juice
2 tbsp ginger, minced
3 cloves garlic, minced
¼ tsp pepper
1 lb broccoli crowns, cut into small florets
1 tbsp cornstarch
2 tbsp cold water
Instructions
Place beef in a 5- to 7-quart slow cooker. Pour soy sauce, orange juice, ginger, garlic, and pepper over beef.
Cover and cook on low for 8 hours or until tender. Increase heat to high; stir in broccoli. Cover and cook for 30 minutes.
Transfer beef and broccoli to a bowl. Strain the liquid into a small saucepan. Whisk together cornstarch and water; add to saucepan, and bring to a boil. Cook, stirring constantly, until thickened. Add to meat mixture. Season with salt to taste.
Serve over rice.
