Cilantro Corn

Ingredients

  • 3–3 ½ cups fresh or frozen corn, thawed
  • 1 medium green bell pepper, chopped
  • 1 tbsp onion, finely chopped
  • 2 tbsp butter
  • ½ cup fresh cilantro, minced
  • 1–1½ tsp cumin
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. In a large skillet, sautee corn, pepper, and onion in butter until tender. Stir in cilantro and cumin. Salt and pepper to taste. Sautee 1–2 minutes.
