Everything Bagel Cottage Cheese Breakfast Tacos
Ingredients
¼ cup cottage cheese
1 egg white
Everything bagel seasoning
Avacado, sliced
2 runny eggs
*Red onion, thinly sliced
*Capers
Instructions
Preheat oven to 400°F.
Mix together the cottage cheese and egg white. Spoon the mixture onto a parchment-lined baking sheet, forming 2 taco shells. Sprinkle with everything bagel seasoning.
Bake for 18–20 minutes until golden at the edges and set.
Let the tortillas cool completely.
Top with the avocado, egg, and toppings.
