Watermelon Fruit Pizza

Ingredients

  • ½ cup toasted unsweetened coconut flakes
  • 1 mini seedless watermelon
  • 2 cups plain coconut yogurt or Greek yogurt
  • 2 tbsp honey or maple syrup*
  • 2 tsp vanilla extract
  • 1 bunch fresh mint leaves
  • 1 cup strawberries, sliced
  • 1 pt blueberries
  • 1 tbsp chia seeds
  • 1 pt blackberries
  • ½ cup granola
*Can also use stevia to taste

Instructions

  1. Carefully slice the watermelon in half and cut two round slices about 1-inch thick for the base of each pizza. Add honey and vanilla extract to the yogurt and stir to incorporate.
  2. Spread about 1 cup of yogurt onto the base of the watermelon pizza. Top with toasted coconut “cheese”.
  3. Slice into quarters and enjoy.
