Baked Oatmeal To-Go

Ingredients

  • 2 eggs
  • 1 cup brown sugar
  • ¾ cup applesauce
  • 1–1½ cup whole milk
  • 2 tsp vanilla extract
  • ½ tsp salt
  • 1 tbsp cinnamon
  • 3 cup rolled oats
  • 2 tsp baking soda
  • favorite toppings:
    • chocolate chips
    • fresh fruits
    • dried fruits
    • pecans

Instructions

  1. Preheat oven to 350°F.
  2. Mix eggs and brown sugar. Add applesauce and stir. Add milk, vanilla, salt, and cinnamon and stir. Mix in oats and soda.
  3. Let sit for 20–30 minutes.
  4. Grease or line muffin pans. Pour ¼ cup mixture into muffin pans. Add favorite toppings.
  5. Bake for 30 minutes.

Notes

  • Use paper muffin cups!
