Beef & Broccoli

Ingredients

  • 2½ lb boneless beef rump roast, trimmed and cut into 2” pieces
  • ¼ cup soy sauce
  • ¼ cup fresh orange juice
  • 2 tbsp ginger, minced
  • 3 cloves garlic, minced
  • ¼ tsp pepper
  • 1 lb broccoli crowns, cut into small florets
  • 1 tbsp cornstarch
  • 2 tbsp cold water

Instructions

  1. Place beef in a 5- to 7-quart slow cooker. Pour soy sauce, orange juice, ginger, garlic, and pepper over beef.
  2. Cover and cook on low for 8 hours or until tender. Increase heat to high; stir in broccoli. Cover and cook for 30 minutes.
  3. Transfer beef and broccoli to a bowl. Strain the liquid into a small saucepan. Whisk together cornstarch and water; add to saucepan, and bring to a boil. Cook, stirring constantly, until thickened. Add to meat mixture. Season with salt to taste.
  4. Serve over rice.
