Chicken Taquitos

Ingredients

  • 2 cups rotisserie chicken, shredded
  • 1 (8-oz) container guacamole, divided
  • 12 soft taco-size corn-and-flour-blend tortillas*
  • ¾ cup colby-Jack cheese, shredded
  • 2 tbsp olive oil
  • 2 cups iceberg lettuce, shredded
  • ½ cup sour cream
  • ½ cup salsa
  • *Fresh cilantro, chopped

Instructions

  1. Preheat oven to 450°F.
  2. Microwave chicken at HIGH 1 minute or until thoroughly heated.
  3. Spread ½ cup guacamole down centers of tortillas; sprinkle with chicken and cheese. Roll up. Place taquitos on a rimmed baking sheet, seam sides down; brush with oil.
  4. Bake 10 minutes or until crisp. Top with lettuce, sour cream, ½ cup guacamole, and salsa. Sprinkle with cilantro.

Corn-and-flour blend tortillas are often labeled as “golden blend” (ex: Don Pancho brand).
