Mix the dumpling ingredients of cinnamon, pecans, and sugar together in a small bowl.
Cut pie crusts into circles large enough to wrap around each apple. Place 1 apple onto 1 pie crust circle; fill core with 1 tbsp of dumplings mixture. Bring the edges of the crust up around the apple and press them together to seal. Place in a 9″x13″ baking dish with sealed side down.
Combine sauce ingredients in a medium saucepan. Bring to a boil 1 minute, whisking constantly. Pour over apples.
Bake 30–40 minutes or until crust begins to brown.
