Refrigerated Coffee Cake Dough

Ingredients

  • 3¾–4 cups all-purpose flour
  • ¼ cup sugar
  • 1 tsp salt
  • 2 pkgs active dry yeast
  • 1 cup milk
  • ¼ cup water
  • ½ cup butter
  • 2 eggs

Instructions

  1. In a large bowl, combine 1½ cups flour, sugar, salt, and yeast. Mix well.
  2. In a small saucepan, heat milk, water, and butter until very warm (120–130°F). Add warm liquid and eggs to the flour mixture. Blend at low speed until moistened. Beat 3 minutes at medium speed.
  3. By hand, stir in 2¼–2½ cups flour to make a stiff dough. Cover tightly; refrigerate overnight. Shape as directed in Fresh Apple Coffee Cake or Streusel Coffee Cake.
